Leif H. Skibsted

Leif H. Skibsted graduated with an M.Pharm. degree from the Royal Danish School of Pharmacy in 1972 and obtained a Ph.D. in inorganic chemistry in 1976 after studying with Jannik Bjerrum at the University of Copenhagen. He has been with the Royal Veterinary and Agricultrual University since 1974 and was in 1978-79 on a sabbatical leave to study photochemistry with Peter C. Ford at the University of California at Santa Barbara. Following mechanistic studies of iron-catalyzed oxidation reactions in meat systems and of light-induced degradation of carotenoids and other plant pigments, he was appointed Professor of Food Chemistry in 1992. His current research interests include high-pressure effects on proteins, the mechanism of antioxidant interaction as studied by ESR and laser-flash spectroscopy, and the radical chemistry of meat pigments. Among the several awards, he has received, are the Niels and Ellen Bjerrum Award and Gold Medal in Chemistry, Carlsberg Award in Agricultural Science, and Ole Roemer Research Award.
